V twin engine hunts

10 yo MTD 42" rider with 18 hp Briggs V twin. ybsxs.7242VF 274729
This machine has been sitting idle for 2 years waiting for me to get around to replace belts etc. Because I have never been able to get the pressed steel pulley off the crankshaft, I removed the engine in order to fit a new drive belt. When I replaced the engine I connected the cables for the choke and throttle to the wrong controls. Yes, I know! So the engine would not start but would run if I poured some gas down the throat. Took the inlet manifold and carb off but only removed the top plate around the fuel inlet (3 small screws) and the float bowl. I removed the solenoid and cleaned a bit of muck from around the bottom of the bowl but did not interfere with anything else. After checking that the solenoid was working, I replaced the inlet manifold. It was while trying to connect the cables that I realised the mistake of previously getting them around the wrong way. Now it starts and runs but hunts badly. I have checked for air leaks but can't find a problem. Your assistance greatly appreciated.

Tank needs to be emptied and use clean gas.
Carburetor needs to be removed and rebuilt, not just wiped out.
Need to be using nonethanol fuel or at least adding an additive to counter act the effects of it.
Add some Sea Foam to the fuel.
