I would like to know whether I should use an oil/alkyd based paint or a latex based paint on my wood kitchen cabinets?

None . The best product to use for a wood kitchen cabinet doors is lacquer of any color . Lacquer should be sprayed nor rolled or brushed and it is best to be left for a profesional kitchen refacer with the capacity to get the job done right.

Since this is a do it yourself forum I can assume that you have opted out of sending cabinets to the shop.A good oil primer and topcoat should give you the job you are looking for.Sand and wipe with mineral spirits before priming.Lacquer is good finish but not as durable as a nice oil job.Refering mainly to water around the sink area.
