I read somewhere on the internet that you can
add shellac to latex paint to give it the properties of oil paint. I can't find the source where I read this. How much shellac

Don't believe everything you read on the Web! Adding shellac to latex paint randomly is foolish. The last time I counted latex paint can be made up of over 100 different ingredients, plus shellac has an entirely different base. Something that might work in isolated cases is not a generic solution.
