I would like to create a rough stucco/plaster finish on an interior sheetrock wall. Can I use drywall mud applied with a trowel, or would another material work better?

That is exactly what you would use, I have created many textures for people who own Mexican restaurants and for homeowners too. I will take 4 ft by 4 ft pieces of sheetrock and make up texture samples useing different trowels and methods,let them dry and paint them, let the owners pick, they turn out very well. I would also sugest you make some samples for yourself to make sure you like it and for the practice, be sure to get you a mud pan for ease of handling the joint compound. I have also rolled stain over the texture and wiped back off then sealed with a clear coat, that is an interesting look, good luck!
