Wood window trim repair and paint

We are in the process of remodeling our family room.
I decided to paint our wood trim white. Of course, I didn't read up on it before I started and I went right to painting. But I noticed some not so smooth areas and decided to try caulking. Didn't work! So while removing the caulk the wood was scratched, gauged, cut, shaved, you name it!!! Now I am stuck with pealing, uneven mess with wood that is shaving off. What is the best way to repair this????

Can you back up and send a wider picture so we can better get our bearings? Close ups need some perspective.

Was this woodwork previously painted or stained/poly'd? where you caulking cracks or some type of damage?

Spackle and joint compound can work but there are wood fillers designed for this as well.
