I want info on "pickling" my kitchen cabinets that are currently stained and varnished.

The idea behind pickling is to let the grain of the wood show through and consort with the finish of choice to create the colour and effect you want. The varnish in this case will largely prevent that. I would suggest you remove a door and on the back side, sand it lightly with 220 grit paper. Rub out the finish you've got in mind and see what happens. Top it with an appropriate clear coat for protection. Because much of the varnish will still be in place, the wood will not be absorbing any of the finish you use, so it'll take a real light touch with cheesecloth and a dry brush to get the effect, but I think you'll succeed.
