My house is pannelized construction, the exterior walls/ceilings are a sandwich of OSB in a frame with rigid insulation already in. I just can't see sheetrocking over solid walls. Any ideas, it's not smooth enough a the panel joints to just paint.

Have you thought about shooting a drywall topping for texture? How about 3/8" sheetrock? What about paneling on the walls? Wall paper?
