Cedar T&G for bath ceiling

I am redoing the ceiling in the bath and have installed the drywall on the new single sloped ceiling. I would like to cover w/ t&g cedar 1x6's. Do I need to seal both sides of the cedar or should I let it weather naturally. If I don't seal both sides I am thinking it will gray out like my fence outside. So the question is: If I want to maintain that beautiful rustic tan cedar appearance will a clear coat on both sides of the board keep it that way? Any info would be appreciated.
Thanks,

Kathy

I doubt the cedar will gray like outside as it is not exposed to the weather. It will change in color some by being exposed to the air. Best way to keep the 'new' look of the cedar is to seal it. Its' not necessary to seal back side.
