uneven walls and window jamb

We're remodelling our old house and have a problem with the walls not being level with the window jambs. We have put up new drywall (after taking the old plaster/lathe off) but the window jamb is wider than the drywall AND then at another spot on the same window the jamb is thinner. I know what to do to fix each problem independantly, but can you do anything when you have both issues?

Use a hand planer to plane down the window jambs, use a belt sander if needed. round the sharp edge with a little sandpaper. The areas that are too shallow to meet the drywall won't be a problem unless they are more than 1/4". If the windows were just installed and are on a nailing fin, you might be able to push them into the house farther on that corner, then shim and screw them so they don't spring back out.
