Panel over paneling?

Panel over paneling?

I hope this doesn't sound stupid; I haven't seen it addressed before. I have that '70's dark grooved paneling and was wondering, rather than painting, wallpapering or removing, can you simply install a nicer, real-wood (say, cedar) paneling over it? Maybe in a diagonal pattern?

The only problem I can see is that you're going to have to adjust outlets, switches and trim because the walls will be thicker.
