Maybe a vaccum leak...

inside the brake booster. It's against the firewall just behind the master cylinder. Try disconnecting the vaccum line and capping it off (seal it off very well), start the engine, then stepping on the brake pedal. If the truck has no change, you found the problem.
IF you have to drive it this way, you should know that the brakes will take a lot more pedal effort to stop.
If it is the booster, you'll need to replace it, I don't think they can be repaired. BTW, my father's truck had the same problem.

might try disconecting the egr valve vacum line and driving to see if the problem still occurs as an egr valve that is slow about closing will cause the vehicle to die when letting off the gas.
a carb that is not adjusted correctly could cause the same problem.
