2000 Jimmy Rattles when accelerating

2000 Jimmy Rattles when accelerating
Hello everyone. Here's the low-down on my Jimmy...
2000 SLT
4x4 (works normally, I have used a few times)
85,000 miles
Haven't had it really long, but am happy with it so far. Bought it from a respectable dealership in the area that claims they check over all their vehicles before selling them.
My problem is just like my title says... when I accelerate, I hear a rattle. This rattle seems to be coming from directly in front of me while sitting in the driver's seat. It's kind of hard to hear under the drone of the engine and tires, but definately there. When I let off the gas, the rattle stops. Strange part (at least to me) is that it happens about 80% of the time, with no apparent reason or rhymn to it.
I have read about the heatshield coming loose on the cat. con. I checked mine and it seemed tight (not to mention on the other side of the vehicle from where the sound is coming from).
When we bought it, my dad helped me check all my fluids, air pressure, etc. Everything except the rear differential (??) because we couldn't get the screw to come out.
Unfortunately I don't know enough about cars to offer any more info. If you ask any questions, I will certainly do my best to get the info. Thanks for you help!!

I've given the exhaust a fair check over, but probably not thorough enough around the manifold. I didn't hear any leaks the first time.
Based on the sound, I don't think it's exhaust (but what do I know??) It sounds like metal hitting itsself because a screw has worked itsself loose.
