Temp Fluctutions, 91 Camry

I have 91 Camry Sedan with 55000 mi, 2L FWD. Recently i changed the thermostat gasket because of a small leak. Afterwards the coolant was topped up. No more leak, however on our outing today it was about -20C the temp guage would stabilize where it should be (about half way) with the rpm around 3k. If the RPM was increased to about 5 or 6k do to hard acceleration or even standing still with the transmission in neutral, the temp gauge would drop very substantially and noticeably.

I do not believe this to be caused by the cold temp because there have been many colder days without this indication. Any ideas as to the cause would be appreciated.

I would suspect an air pocket in the cooling system. When you changed the thermostat, did you bleed it? If the t-stat housing has a small screw or bolt on top, you need to remove it with the engine off and cold, and add antifreeze until it comes out of the hole. Replace the screw and you should be okay.
