Sealing washers

What kind of sealing washer should I use? Are certain ones for certain applications? I need a new sealing washer for the service bolt to relieve fuel pressure. I would like to have some on hand for different repairs. When are each kind used ... O rings, plastic washer, copper or brass washer, what about teflon tape, compound you put on the threads.

For a 1992 Honda Accord. I am going to change the fuel filter and I am going by the Haynes manual which says to replace the sealing washer on the service bolt after releasing the pressure. I already got the new filter and it came with 3 what look like copper washers. I am not sure if 1 of those is to used on the service bolt.
