Jegs, Summit and other racing mags have kits to do this. It's a popular swap.
To do it RIGHT, you have to upgrade the cooling, brakes and suspension to accomodate the changes and have a reliable and stock looking conversion. If you do it right, it will be a hoot to drive.

No doubt about the hoot factor Joe. My buddy had a 69 Datsun P/U with a stock 200hp Chevy 350 in it and the thing went VERY well. It had a T-350 with a trans-go stage2 kit in it and a 3:43 posi (I think?) out of a Chevy truck(it had a 6 bolt wheel pattern like the Datsun) He surprized a lot of so call fast cars. He took special pleasure in dusting off 5.0 Mustangs

Yep, that's a wickedly fast truck when it's done right. Most small block 350's will make it move.
The trick is to make it look like it came in there and look stock, while keeping the creature comforts such as A/C and everything working as it should.
Make it emission legal and reliable and you've got the one to watch
