I Need to know if a layperson should try to replace their own cv joints on a 1993 Plymouth Voyager

Not too bad of a repair. Get rebuilt axles, it's easier and more cost effective.

Hit the parts store or library for a repair manual to guide you. Once you read it and see what is involved, you can make a decision if you want to do it or not.
