Sculpturing a beam

Our kitchen has a beam built of 2" x 12" 's running through it. It is slightly irregular but I managed to box it in with drywall pieces. In the irregular areas, I tried building up the surface with layers of drywall compound but it cracked in many places.

I understand drywall compound is only meant for thin layers--what type of material should I be using?

You can build up with mud but like you have encountered it will crack. If it's a lot of mud you have to put tape over it to prevent cracking. I don't know of anything else you can put up that wont eventually crack.
