does anybody have an idea on how to remove stucco from the walls and ceilings without wrecking the drywall underneath

Welcome to the forums

It is doubtfull you have stucco which is a masonary product primarily used on the exterior.

I assume you have either plaster or texture that resembles stucco. Generally you sand and/or scrape what you can and then skimcoat the walls with joint compound.
