should I plaster or use compund on the sheetrock

I am having sheetrock put on 3 cielings of my house. current plaster is loose and very old. would it be better to plaster over the sheetrock or just compund it?

If you install blue board drywall you plaster over it. Regular drywall gets taped and finished with or without a skim coat of joint compound.
