Why does Joint compound get mold on it

I have purchased a few 5 gal USG joint compound containers .I keep it in about 50 degree room and close the lid tight.After about 2-3 weeks there is mold on the top of the compound. I even tried to put plastic food wrap on the top compound (part not used),tried to use plastic under lid and tape it close but still gets mold. What can be done so I don't have to throw out the can.

Scrape the sides of the bucket down with a 6" knife so that they are completely clean. Then pour some water on top. When you go to reuse it, pour the excess water off and remix the mud. Just like food in a refrigerator, it won't last forever.
