Extensive patching on heavily textured ceiling

I have removed some walls and soffits in a kitchen that had heavily textured ceiling...that "star Burst" pattern that was achieved by smashing a circular sponge into a heavy ceiling spackle...

I would say I'll be hanging new on about 25% of the ceiling area.... but it is scattered, not continuous.

I don't want to drop and replace the entire ceiling ...can I possibly sand all this down to flat and then go back with a more contemporary knock down texture ? It is a 12 x 18 room

I don't know how well you will be able to sand the texture. It would probably be easier to scrape what you can and then skim coat the ceiling.
