12 volt 3000 watt inverter
So, if you take 2 2/0 cables side by side, connected at each end with something like a T shaped bus bar, with an inline fuse on each, will that equal the amp capacity of a 4/0 cable?

Welcome to the forums.
No.
2/0 = 195A
3/0 = 225A
4/0 = 260A
Doubling up 2/0's will yield roughly 390A
That is better than a single 4/0.
At full output...... that invertor requires at least 250A.
