How do you separate PVC pipe at it's joints?

With a saw and new fittings. You can't take pvc joints apart. They are permanent glued.

You talking about drain or water pipe, water pipe forget it, drain pipe there is a tool you can buy called a rambit, designed to remove the pipe glued inside a hub of a fitting so you can reuse that fitting once again.
