Question QestPEX to copper

I recently used two QestPEX plastic tees (one for hot, the other for cold) to connect CPVC to copper. Is this ok? A plumber I know said it was, but I wanted to make sure. I suppose the main concern would be the chance that the metal ring might lose it's grip on the copper pipe and allow it to slide out.

A copper / CPVC adapter would have been a far better way to go but....I don't know your plumber friend.
If, (IF) you just stuck CPVC on copper tubing and crimped it in place, no, it will not hold. If you crimped CPVC on a copper ribbed adapter, no, it will not hold. If you stuck the quest tee on plain copper pipe and crimped it in place, no, it will not hold. See the pattern developing...

Use the proper material just so you will have peace of mind in the future.
