Question

We want to remove the tub from our spare bathroom since it is cracked at the bottom from the previous owners. Instead of replacing it we would like to turn it into a storage closet and cap off? the current water pipes. (unsure if the proper term). Since we do not need the extra tub at this time, the space would be usable as a storage closet.

You can cap them off I see nothing wrong with it.

Find out what type of pipe you have and get the proper caps, thats all it will take, also make sure you cap the drain line also.
