House is 30 years old. Copper system. For about 6 months a loud, very high and very loud noise is heard when commode tank is refilling. Began with 1 toilet. Plumber suggested that tank valve be replaced. Installed new valves on 2 commodes. Noise not abated and both toilets now shriek.

Could be the shut-off valves to the toilets have crude in them, or possibly their washers have deteriorated. Try replacing them and see if that helps. I would guess they have crude in them simply because they are at one of the low points in the cold water system.
