Alternative to Kitchen Vent

Alternative to Kitchen Vent
Currently, my very old kitchen does not have a vent. The only vent is the main stack about 30 feet away...and it obviously doesn't do a very good job. So the kitchen trap is constantly emptying.
So now I'm remodeling...but I'd really prefer not to have to put in a vertical stack because that would turn a minor job into a MAJOR job (opening a wall for two stories, roof work, etc, etc).
Is there any type of alternative to a normal vent? Some fixture or special fitting?
Any suggestions?

If allowed by your local Building Codes, an air admittance valve would work very well, and they're easy to install.
