Venting remodel

I have an existing 3" galv vent in the basement that once served two sinks. It now serves one and as part of a remodel I want to relocate the vent and use plastic for the relocated portions of the run.
My questions are:
1. What diameter plastic pipe should I use between the sink and the vent?
2. What is the best practice for joining the plastic to the 3" galv. The galv pipe will be cut at the point it goes vertical and there will not be threads to attach to.

Use 1.5" to the sink, join the galvanized and PVC by means of a mission no hub coupling, it is a rubber coupling with 2 stainless steel hose clamps and a stainless steel covering over the rubber.
