Question Hot Water Pressure Variation

New Homeowner. My hot water pressure drops off when I don't have a faucet on full open, and happens on all faucets in the house, including the one right next to the hot water heater. I recently installed a hot water heater (switching from tankless heating through my steam boiler which ran out of hot water very quickly). I was hoping the new water heater would resolve the issue. I don't have the same problems with cold water, so I assume supply to the house is ok. All supply lines are copper.

Thanks in advance for any suggestions on what might help remove the variation.

It sounds like you have two handled faucets. When the hot water stem heats up, it expands and closes down. The hot water supply to the faucet should be about 120F. Higher temp. will increase the effect.
