Fluidmaster red flapper sticking

After some leakage issues, I replaced all the flappers in the house with some standard FluidMaster 501 red flappers. While they seal just fine, they are driving me NUTS!

On about 1/3 of the flushes, either the flapper chain gets tangled, the hook that goes onto the handle arm flips upside down, holding the chain too tight for the flapper to go down, or the flapper simply sticks in the up position. This means a lot of waiting by the toilet to make sure it shuts off.

I already tried the straw trick, and it doesn't help one bit.

What am I doing wrong here? I'm getting tired of having to keep pulling the top from the tank to fiddle with it.
