Insulating around PEX
I'm redoing the plumbing lines in our cabin. We'll be moving the water heater to the crawl space under the cabin, and the supply line comes in there.
I would like to use PEX, but am unsure when I go through the floor into the cabin space, how do I seal around the pex pipe? Critters like these to stay open, but the wifey doesn't like the critters in our living space.
Can I use expanding foam around the pipe?

You won't be really "insulating" pipe between floors, but to stop air flow and critter flow, use some red electrical thermal seal. It is available at electrical supply houses and maybe in the electrical department of the big box stores. It will also help keep fire from moving from floor to floor, which is required by code.
