where to get plastic 3/8" PEX fittings.
I just got a RO filter equipped with 1/4" tubing and need to connect it to 3/8" PEX lines. RO water should not contact metal fittings and I am having trouble finding plastic ones. Where can I get the following;
Two, 3/8" plastic PEX Ts (to connect to tank and branch off to frig)
Plastic 1" pipe thread to 3/8" PEX (to connect 20 gal tank to 3/8" PEX)
1/2" or 3/8" PEX to 1/4" pipe thread, to filter, or 1/4" tubing (for supply to RO filter so this could be brass)
Two, plastic 3/8" PEX to 1/4" pipe thread from filter or 1/4" tubing (for waste discharge and filtered water)

I don't think you will be using PEX for this application. I have never seen a 3/8" PEX crimper, although I've never seen the other side of the moon, either, so they may exist.
You are probably looking for sharkbite type plastic fittings.
Tee: RapidAir 3/8 in. Nylon Push-to-Connect Tee-50200 at The Home Depot
Just put "plumbing push connectors" in the search block

I got the 3/8 pex crimper and pex at Menards. most of the pex is in. I don't want to put a push in type connector and enclose it in a wall. I don't trust them.

Guess the other side of the moon is cheese, like I suspected We don't use it here, but it is available at plumbing supply houses. I understand not wanting to close up the connectors in the wall, but it wasn't stated in your OP. It may be the mfgr is going to be the best supply connection, since they aren't found locally or in larger stores.
