What fitting do I need?
I am installing a humidifier. It comes with a saddle valve to attach the 1/4 inch OD tubing for the supply. I don't want to use a saddle valve, haven't heard good things. What fitting do I need to install in my 1" copper line to be able to tap off the line and attach the 1/4" compression tubing?

Are you planning on sweating the copper pipe? If so, you'll use a 1"x1"x1/2" tee, a 1" repair coupling, and then on the 1/2" side, I like using a 1/2" 1/4-turn angle stop like you'd use on a sink or toilet as the shutoff and connection to the 1/4" fridge line.
There are some options, but that's the general idea.
You can make the same connections with SharkBite connectors too if you don't want to sweat/solder the connections.

Shark bite fittings are great but I would not use on for this job.
The tee will swivel and leave the valve in the bottom position where any trash in the line will fall into.
The valves going to flop around when your trying to turn it.
The 1" pipe will have to be able to move to connect it.
