1/2" insulation on pex doesn't fit

Seems like all the foam insulation sold is to fit copper pipes?
I have 1/2" foam bit it's too loose for the pex.
Any way to make it fit or something better to buy?

You are providing insulation. Why must it fit snugly? The OD of PEX is the same as the OD of copper pipe. Look again at the label. It may be for iron pipe which has a different OD.

I'm trying to cut the exposure to air as my pipes are sweating a lot on humid days. I figured they insulation had to be right next to the pipes and/or to cut any air from getting close.

Use Tyvek tape and tape all the joints and strips if the strips don't adhere well (and sometimes they don't).

You mean tape over the elbows as well?
What about the ends of the insulation - should they be sealed up?

If air can get to the elbows, yes. You don't have to go wild with tape, but just seal the crack and any joints you make with the insulation. If the insulation ends abruptly and air can get in, yes seal the ends with tape.
