1/2" pex to 3/8 or 1/4 water inlet

what connector type do I need to connect a 1/2" pex to a 1/4" water filter inlet line?

First you need to figure out if you need 3/8" or 1/4". I'm guessing it will be 1/4". Then you need to know what type 1/4" you need, compression or NPT. If you can't find the PEX fitting you need it may be easier so stack/screw together two fittings to make what you need. You may need to do something like a 1/2" PEX to 1/2" female NPT then use a 1/2" male NPT to the type of 3/8" or 1/4" you need.

If you have an existing angle stop, the easiest way would be to use a John Guest adapter. This one is 3/8 x 3/8 x 1/4" tube out #803389:

Another way is to use two straight adapters. The adapters will be #PP201612W (1/2" to 3/8") and PP201208W (3/8" to 1/4"). You will need a short piece of 3/8" tube to connect the two straight adapters.

Do you have to use a push to connect with the black/grey poly tubing?
I'm assuming you can't use a compression fitting to tighten around it?
I have a 3/8 to 1/4 elbow but was hoping not to use it.
The rainbird filter takes 1/4.

How about a picture. I thought you wanted under sink connectors.

If the 1/4" side of the elbow is compression, you can use a compression nut and Delrin Sleeves and inserts.
Don't use brass ferrules (sleeves) on the plastic.

Tighten the 1/4" nut with a small wrench until the sleeve grabs the tube and then tighten an additional 1 full turn and check for leaks. Don't overtighten, it doesn't take much to seal the joint.

1/2" white pex at the back here with a stop valve.
Black pipe shows 3/8" inch with a reducing elbow to 1/4" (which I could just remove if there is a 1/2 to 1/4 union?)
