Not only should you...pretty sure you HAVE to during a remodel. Based on the fact I can see up through the hole, I'm assuming that's what it is?
Drum traps no longer meet code to my knowledge. Looks like you may have some clearance issues on the top one, will you be able to move it over at all?
Such a shame...look at all those beautiful soldered joints. Don't just trash it after removal...recycle for a few extra bucks. After you hose it out of course.

Agreed, get rid of those drum traps. Unlike P-traps, they are supposed to be cleaned out yearly since they don't auto-clean themselves.
