Water hammer arrestors throughout the house
I hear some tapping when using some of the plumbing in the master bedroom and guest bath which are both on the second floor. I'm wondering if it's prudent to install arrestors there. Mind you it's not a rapid tapping like you'd think, but rather it's a steady tapping that decreases in tempo and stops within 20 seconds.

A tapping sound like you describe is usually the pipes expanding and contracting with change in temperature. Something a water hammer arrestor will not help with.
Water hammer occurs when a valve is closed very quickly and is only one "thunk". It most often happens with appliances like clothes and dishwasher but can happen if you have single handle faucets and slam them shut quickly.

If you know the area of the wall where the banging is occurring.... you can make a small hole and spray in some minimally expanding spray foam.
Don't use the regular expanding foam as it can blow the wall out.
I have done this and it does work.
I also use the same foam to hold electrical boxes in the wall when the hole is too big.
Works great for the pipe that comes out of the wall for a shower head and is flopping all over the place.
