Our 8 year old gas water heater is now making a "popping" noise like the sound of heavy rain drops. This noise seems to be more obvious after using the hot water. Any suggestions on where to start?

Cool

Attach a water hose to the drain spigot at the bottom of the heater and drain out the sediment that is most likely causing the popping.
Good luck!

Sounds like an excess pressure problem or a faulty toilet tank water inlet valve.
Where does the noise seem to be coming from?
