I am installing new bath/sink/toilet. Does the waste need sealant between the washer and bath or washer and metal bit and if so, is it the bath seal sealant or another type please? Thank you.

Cool

The sink and tub drain connections should seal with slip nuts and rubber or plastic washers, except for the bathtub drain itself, which needs plumber's putty under the lip in the bottom of the tub.
The toilet needs a wax ring seal made for the purpose between the toilet base and floor flange.
