Insufficient Hot Water
Gas hot water heater runs out. Do I need to replace thermostat? How do you do that? Thanks.

The problem may not be the water heater nor the thermostat. There are several other potential problems related to either the tank and or the demands made on the water heater.
There isn't too much information posted here to accurately determine what most likely is the problem.
Kindly use the REPLY button and add some additional info to the orginal posting you made.
Would need to know the tanks gallon size, age and installed location. Size of house, hot water using appliances, number of showers, number of bathrooms, etc and number of occupants helps too.

Is this a new phenomena? Could be a bad dip tube. Cold water side has a tube that forces water to bottom of tank. Several years ago a number of manufacturers went to a plastic tube that did not hold up under certain water chemistries. Result was a tube that deteriorated. White pieces began showing up in all your faucet aerators. Hot water would run out fairly quickly.
If this is your problem, turn off main water, relieve pressure in system and remove the cold water connection to hot water heater. Be sure to also turn off electric or gas. Use your finger to pull the tube out of the cold water inlet on the water heater.
Most plumbing supply houses have replacements. Good luck.
