No-Knead Bran Bread
For those of you not ready to try homemade yeast bread baking, I'll post a few no-knead breads.
I just LOVE homemade bread baking, but with my schedule sometimes I "knead"
something tasty and quick!
Prep Time: approx. 15 Minutes.
Cook Time:
approx. 45 Minutes.
Ready in: approx. 2 Hours .
Makes 2 -9x5
inch loaves (20 servings).
3 cups whole wheat flour
1/2 cup dry milk powder
1/2 teaspoon salt
2 tablespoons active dry yeast
1/4 cup honey
1 1/4 cups warm water (110
degrees F/45 degrees C)
2 cups whole bran cereal
1 egg
3 tablespoons vegetable oil
Stir together flour, milk powder, salt. In a separate
large bowl, dissolve yeast and honey in warm water. Let
stand until creamy, about 10 minutes. Stir in the bran
cereal, egg, oil and about half of the flour. Stir in the
remaining flour until a sticky dough is formed. Cover bowl with
a damp cloth and let rise in a warm place until doubled
in bulk, about 1 hour.
Preheat oven to 375 degrees F (190 degrees C). Lightly
grease two 9x5 inch loaf pans.
Stir down batter and pour into prepared pans. Bake in
preheated oven for 40 to 45 minutes, until bottom of loaf sounds
hollow when tapped. Let loaves cool in pans for 5 minutes
before removing and placing on a wire rack to cool completely.
