Potatoes O'Brien
I can't help it, but I am a potato lover. Perhaps it's because I'm Irish.
5 or 6 medium potatoes
1 1/2 c. milk
2 tbsp. butter
1 c. diced cheese
1 sm. onion, finely diced
1/2 med. green pepper, diced
1 small jar pimento, diced
1/2 tsp. salt
Cracker crumbs
Cook potatoes in jackets and peel and slice. Combine milk and butter and cook until slightly thickened. Add all other ingredients except potatoes and crumbs. Pour sauce over cooked potatoes and dump into baking dish. Cover with cracker crumbs. Bake 375 for 40 minutes for 4-6 servings. (Note: I can not eat green peppers or pimentos, so I substitute lots of fresh parsley to add color and garnish.) And, since I love fresh ground black pepper, I alway liberally sprinkle dishes with it. Always adjust recipes to your personal tastes.
