freezing cakes with icing???

Question freezing cakes with icing???

I baked too many cakes for a big party and have some "leftovers" - coconut cake with cream cheese coconut icing, carrot cake with cream cheese icing, and chocolate cake with peanut butter icing. can i freeze these for thanksgiving?

They do it all the time . lot of the restaurant's get theirs that way with the big cakes. 6 to a box mixed kind.

They can be frozen with no trouble. Make sure you place them into an air tight container so they will not absorb "freezer odors".
When thawing remove them from their containers so they won't weep and become soggy.

Freezing cakes with icing is nothing new. Happens all the time and there is not law that forces sellers and or retailers to disclose the prior has been done. So cake freezing is done all the time and the consumer is not aware.

The instructions above are correct. Cake must not be sealed in any way during the defrosting. The accumulated frost will cause the food item to become soggy.

Best method to freeze cake and or other such food items, is to not seal them in plastic or any type of enclosure that does not allow breathing to occur. That causes moisture to occur during the freezing and after during defrosting.
