No-Bake Cookies with regular oats?
All of the no-bake cookies recipes call for instant or quick oats...
I only have regular oats.
Will it make a difference if I don't use quick oats?

Unfortunately it would make a difference which type of oats you use.
Instant oats are partially precooked.
If you sustituted regular oats in a recipe that called for instant, the oats would be under cooked.
