lemon extract

I need the equation for lemon extract vs lemon juice.
How many drops of lemon extract equal 1 teaspoon of
lemon juice?

There is a difference between extract and juice. Lemon extract does not contain acid. If you needed to do a substitute for 1tsp of lemon extract, it would be 1 tsp of vanilla extract and 1 TBS of lemon zest or peel.
Normally, a recipe containing lemon juice needs the acid contained in it. The peel or zest of a lemon has oils and the flavor. Good luck.

Thanks for the response and I understand what you
are saying but it doesn't help me.

Years ago my mom made a lemon sauce for spice
and gingerbread cakes. I am trying to duplicate the
sauce but all the recipes I have found call for lemon
juice. Mom never had fresh lemons around and I am
sure she used lemon extract. So you see I am trying
to find out how many drops of lemon extract would
equal the taste of one (1) teaspoon of lemon jice.

Are you sure she didn't have that little round yellow ball of reconstituted lemon juice hiding in the back of the fridge? She may also have figured out her own mixture of lemon extract to water to give the taste of lemon. Lemon extract also has alcohol in it.

It is my understanding, you should use half the amount of lemon extract in place of the amount required for lemon juice. I believe extract is stronger than the juice. I've never done this before so I really don't know. You can always try it and see what happens...and your recipe will get better and better right?!
