Cowboy Tim's Fiesta Stew

Ingredients:
· 3 Tbs. All-purpose Flour
· 1/2 Tbs. Cumin
· 1/2 Tbs. Chili Powder
· 1/2 Tbs. Garlic Powder
· 1/2 Tbs. Allspice
· 1/2 Tbs. Sage
· 1/2 Tbs. Cinnamon
· 1.5 lb. Beef Stew Meat, cubed
· 2 Tbs. Vegetable Oil
· 1 cup Beef Broth
· 1/2 cup Apple Juice
· 6 small Potatoes, peeled and quartered
· 2 Sweet Potatoes, peeled and cubed
· 1 each Green, Red, and Yellow Bell Pepper, cut into 2-inch strips
· 1 medium Onion, peeled and finely chopped
· 10-oz. can Tomatoes with Chili Peppers
· 8-oz. can Tomato Sauce
· 2 Tbs. Honey
· 2 Granny Smith Apples, cut into 1-inch cubes
· 1 can Dark Red Kidney Beans
· 2 Tbs. fresh Parsley, chopped

Combine flour, cumin, chili powder, garlic powder, allspice, sage and cinnamon in a large bowl. Add the beef cubes and toss with a fork to coat.

Warm the oil in a large, heavy pot over medium high heat. Brown the meat in small batches, browning on all sides. Return all the meat to the pot, add the broth and apple juice. Cover and simmer over medium heat until the meat is tender, about 1 hour.

Add potatoes, bell peppers, onion, tomatoes, tomato sauce and honey. Cover and simmer until the potatoes are tender, about 30 minutes.

Add apples and kidney beans. Cover and simmer until apples are tender, about 15 minutes. Stir in the parsley.
