Banana Oatmealw/raisinscookies
BANANA OATMEAL CHOCOLATE CHIP W/RAISINS… COOKIES
“Now that’s a mouthful… “
¼ cup solid vegetable shortening
1 cup sugar (brown sugar makes them richer, but your choice)
1 egg
1 cup mashed banana’s (2 banana’s)
1 ½ cups all-purpose flour
½ tsp baking soda
1 tsp salt
1 tsp cinnamon
½ tsp nutmeg
2 cups quick oats (I use regular Quaker Oats)
1 cup chocolate chips
Raisins.. add to your consistency…
Preheat oven to 400 F. Mix shortening, sugar, egg, and smashed banana’s well. Add flour, baking soda, salt, cinnamon, and nutmeg. Stir in oats, chocolate chips, and raisins…
Drop by rounded tablespoons onto baking sheet. Bake 8 to 10 minutes. Flatten for crispier cookies, leave rounded for cake like cookies….
Cool on wire rack, should get about 4 dozen from mix….
I also replaced the bananas with "mexican papaya", it turned out even better, moister... tastier.. you can replace the banana with just about any good fruit, apricots, peaches, mango, papaya, etc...
