Falafel Question
According to all the recipes I've read that use dried garbanzo beans (AKA chickpeas) you soak overnight in water and they swell up. Well mine have been soaking overnight (in the refrigerator) and they have absorbed no water and no swelling. What am I doing wrong?

Ray: Nothing I see online says anything about soaking them in the fridge. Also, one article said 24 hours rather than just overnight. That said, I've never done this.

Ray, I cook a lot of dried beans, but never garbanzo's, so these are just guesses and suggestions.
Could be the beans have been sitting on the shelf too long and became over hardened. So, try either adding some salt to the water and let it soak another 12 hours, or try blanching them by letting them come to a boil for a minute, then put them back in the fridge (after cooling of course

Actually the beans are not cooked after soaking they are run through a food processor to makes a paste that is either fried or baked as patties or balls. I have put them in a warm place and will give them another day to soak. Thanks for the answers.
