Quesadilla Pie (Mexican)
One of my own creations....
As always, quick and easy!
You can "play" with this, any way you want.

1-1/2 lbs. lean gr.beef
1 small chopped onion
1 can chili beans (no meat)
(better in taste AND consistency than refried....refrieds go gooey in this recipe)
1 cup colby-jack (or Mex.blend) cheese
1 10 oz. can enchilada sauce
1 can (15oz.) diced tomatoes with chiles (drained)
1 pkg. large-size tortillas (flour)
mild or med.salsa

Take the chili beans, drain well, set aside.
Brown gr.beef and onion, drain well.
Into large bowl,
Take chili beans and smash with fork.
Add ground beef-onion, enchilada sauce (use half, then add to taste), half of the cheese, add tomatoes, a lil salsa if you want, mix together.
Take a deep-dish pie plate (10" if possible)....grease bottom (or PAM). Put one tortilla on the bottom.
Cover with some of the mix, spread out. Top with a tortilla , do more mix,etc.
Do this layer system 3-4 times, depending. Use all mix up, top with one last tortilla.
Now gently.....
take a dinner plate, turn it upside down and GENTLY push down on top to firm it up a lil. Take plate off and cover LIGHTLY with foil.
Bake for 30-35 min. at 350-375*.
Turn oven off.
Top with more cheese and
put in oven for 5 min.
Cut into pie pieces.
Serve with salsa and sour cream.
