Fiesta Rice Casserole
or skillet dinner......
You can warm in the oven for 20 min. or just serve it from the skillet.

1 pound lean gr.beef
2 cloves minced garlic
3 Tablespoons minced or fresh chopped onion
2 cans (15oz.each) drained black beans
1 teaspoon chili powder
1 can (not drained) Mexican-style stewed tomatoes
1 cup thick-chunky salsa (temperature you want)
pinch of cilantro
pinch of cumin

Brown beef with garlic
and onion. Drain WELL. Add rest of ingredients (except tomatoes) and bring to med-high.
Add tomatoes last few minutes before serving over rice.
****Now I have warmed in oven (mixed together with rice) and topped with shredded cheddar cheese for 20 min.
OR just served over rice.
Sour cream on the side.
Both ways it IS great!
